400 Calories: Roasted Turkey Tenderloin

In order to add variety, as well as useful information, to my blog, I have decided to share meals under 400 calories.

Tonight’s special is roasted turkey tenderloin and vegetables. It’s an easy and delicious recipe!

Roasted Turkey Tenderloin & Vegetable

Ingredients

28 oz. turkey breast tenderloin from Aldi, my favorite grocery store. I prefer rotisserie-flavored, but they also have other flavors such as teriyaki.

4 cups of potatoes, cut into large pieces

2 cups of onion, cut into large pieces

2 cups of baby carrots

Directions

  1. Preheat the oven to 325°, or as directed on roast package.
  2. Pour a little extra virgin olive oil on the bottom of a glass or roasting dish.
  3. Place the turkey tenderloin in the dish.
  4. Pour your veggies around the turkey.
  5. Drizzle olive oil over everything.
  6. Sprinkle with salt and pepper.
  7. Cover with aluminum foil
  8. Place dish into oven.
  9. Roast for 40 minutes.
  10. Turn turkey and stir veggies.
  11. Cook for an additional 20 minutes.

Ensure the tenderloin is cooked through. If it isn’t, cook until finished in 10 minute intervals. Allow the dish to cool for 10 minutes. Serve & enjoy!

Time to Eat

My dish serves 6 at 270 calories each. This allows for dinner plus two lunches for my hubby and me. Here are the other numbers for those who want them:
